Spanish Noodle Bites

Ingredients
  • 4 ounces Pennsylvania Dutch Good Source of Whole Grain Pasta Ribbons
  • 2 medium yellow potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 small white onion, chopped
  • 4 ounces mild Spanish style chorizo sausage, finely chopped
  • 1 small green bell pepper, chopped
  • 1 tablespoon smoked paprika
  • 2 teaspoons dried oregano leaves
  • 8 eggs
  • 2 tablespoons chopped fresh cilantro
  • 1/4 teaspoon each salt and pepper
Directions
  1. In a large pot of boiling salted water, cook pasta ribbons for 4 minutes. Add potatoes and cook for 4 minutes or until pasta ribbons are tender but firm. Drain well and set aside.
  2. Preheat oven to 400° F.
  3. In a large ovenproof nonstick skillet, heat oil over medium heat and cook onion, sausage and green pepper, stirring for 5 minutes. Add cooked pasta ribbons, paprika and oregano and cook, stirring for 5 minutes or until mixture is softened.
  4. In a bowl, using fork, beat eggs, cilantro, salt and pepper until frothy. Pour over pasta mixture, lifting and stirring eggs into the pasta mixture with heatproof spatula. Cook for 5 minutes or until edges are firm and bottom is golden. Place skillet in oven and bake for 10 minutes or until knife inserted in center comes out clean.
  5. Slide baked mixture onto cutting board and let cool slightly. Cut into 1 inch squares to serve.
