Ingredients
12 ounces Pennsylvania Dutch Broad Egg Noodles
2 tablespoon olive oil
2 cloves garlic, minced
1 medium onion, chopped
2 bell peppers, chopped
1 tablespoon basil
4 cups spaghetti sauce
1/2 pound sliced pepperoni
2 cups shredded mozzarella cheese, divided (part skim if desired)
1 cup Parmesan Reggiano cheese, grated, divided
Directions
Preheat oven to 350°F.
Cook noodles according to package directions.
Heat oil in a large skillet. Add garlic, onion, peppers, and basil. Cook 3 minutes.
Add sauce and pepperoni. Simmer 5 minutes.
Spread 1 cup of the sauce mixture into the bottom of a 13 x 9-inch baking dish. Add layers using half of the noodles, half of the sauce mixture, 1 cup mozzarella, and 1/2 cup Parmesan cheese on the top. Repeat this layering technique again. Bake for 25 minutes.
